  • 350 grams of chocolate cookies
  • 40 grams of almond flour or flakes
  • 100 grams of unsalted butter
  • cocoa powder   

For the filling:

  • 250 grams of cream cheese
  • 150 grams of ricotta
  • 110 grams of fine sugar
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 100 grams of chocolate callets (melted)
  • 2 tablespoons of red food coloring

Preparation method

  1. Place the biscuits and almond flour in the bowl of a food processor and process into coarse crumbs. Add the butter and mix everything.
  2. Line the bottom of the baking tins with baking paper or butter.
  3. Using the back of a spoon, press the crumb mixture into the bottom of the shapes. 
  4. Chill for 30 minutes - 1 hour or until cold.
  5. Preheat the oven to 140 ° C.
  6. To make the filling, place the cream cheese, ricotta and sugar in the bowl of a food processor and process for 2-3 minutes or until smooth.
  7. Scrape the sides of the bowl, add the eggs and vanilla and mix a little longer. Add the chocolate and food coloring and process until well mixed.
  8. Divide the mixture between the molds and bake for 40-45 minutes or until done.
  9. Let the cakes sit at room temperature for 30 minutes before refrigerating for 2-3 hours or until cold.
  10. Dust with cocoa just before serving.
